Brown Beans salad with mayonnaise.
300 grams (12 oz) white beans
1 onion, finely chopped
1 carrot, grated
2 tbsp mayonnaise
2 salted cucumbers
1 fresh cucumber, to decorate
parsley
2 - 3 tbsp olive oil, to fry
Method:
1. Soak beans overnight in plenty of water. Rinse and remove any remaining skin on
beans. Place beans in a saucepan with enough water to cover beans. Cook until beans are soft.
Skim the surface of water at intervals. When cooked, drain.
2. Place cooked beans in a serving dish add salted cucumbers.
3. Put grated carrot into preheated skillet with oil and fry. Stir, add chopped onion, saute.
4. Combine beans with fried vegetables, add chopped fresh parsley, drizzle mayonnaise over beans. Decorate with fresh cucumbers slices. Serve.
