Eggs stuffed with liver.
6 eggs hard boiled.
parsley leaves
lettuce leave.
For stuffing:
100 g (3,5 oz) chicken or goose liver, boiled, finely grated.
3 tbsp butter.
salt to taste.
Method:
1. Cut the eggs into halves horizontally and slip out yolks into a small bowl. Mash yolks with a fork. Set aside eggs whites.
2. Boil the liver in the water. Drain. Chill and very finely grate. Mix with mashed eggs yolks and butter. Fill eggs whites with the mixture.
3. Decorate the stuffed eggs with parsley leaves and serve on lettuce leave.
