Paskha - sweet cheesecake
(Cooked in milk from cottage cheese).
2 lb cottage cheese
1 litre (2 pint) milk
1 ea egg, beaten.
70 g (3 oz) sugar, or to taste.
100 g (4 oz) butter.
vanillin, to taste
Method:
1. Heat milk until boils. Put cottage cheese into boiling milk and stir carefully.
2. Leave mixture until cool. Strain and drain cottage cheese very well.
3. Add remained ingredients into the mixture, mixing on low speed after each addition, until mixture became homogeneous. Heat the mixture on the water bath for 30 - 40 minutes. Chill.
4. Put under Cargo (place weights of some kind on the cottage cheese sweet cake mixture in the bowl) and leave in a cold place or fridge for 4 hours.
In Russia people celebrate Easter by adorning their homes baking kulich cakes, making a Paskha (sweet cake out of cottage cheese), and painting as many as hundreds of eggs, which were divided equally between members of the family. They greeted relatives and friends by kissing them 3 times and saying "Christ in Risen!"
From the earliest times, the egg was a symbol of rebirth in most cultures. Eggs were often wrapped in gold leaf or, if you were peasant, colored brightly by boiling them with the leaves or petals of certain flowers.
